Taco Tuesday just got a whole lot spicier with these oven-baked Buffalo chicken tacos. This recipe takes the classic taco and adds a delicious twist with spicy Buffalo chicken and a tangy blue cheese coleslaw.

To make this dish, you’ll need the following ingredients:

For the Buffalo chicken:

  • 1 pound boneless, skinless chicken breasts
  • 1/2 cup hot sauce
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon honey
  • 1/2 teaspoon garlic powder
  • Salt and pepper

For the blue cheese coleslaw:

  • 1/2 cup mayonnaise
  • 1/4 cup crumbled blue cheese
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper
  • 4 cups shredded coleslaw mix

For the tacos:

  • 8 small corn tortillas
  • 1/4 cup chopped fresh cilantro
  • Lime wedges, for serving

To start, preheat the oven to 400 degrees F.

In a small bowl, whisk together the hot sauce, melted butter, honey, garlic powder, salt, and pepper. Place the chicken breasts in a baking dish and pour the Buffalo sauce over them, turning to coat evenly.

Bake the chicken in the oven for 20-25 minutes, or until cooked through and no longer pink inside. Once done, remove from the oven and let it cool for a few minutes before shredding the chicken into bite-sized pieces.

Meanwhile, make the blue cheese coleslaw. In a large bowl, whisk together the mayonnaise, blue cheese, apple cider vinegar, honey, salt, and pepper. Add the coleslaw mix and toss to coat.

To assemble the tacos, warm the tortillas in the oven for a few minutes. Then, add a generous spoonful of the shredded Buffalo chicken to each tortilla. Top with a scoop of the blue cheese coleslaw and sprinkle with chopped cilantro.

Serve the tacos hot, with lime wedges on the side for squeezing over the top.

These oven-baked Buffalo chicken tacos are a great way to spice up your Taco Tuesday routine. The Buffalo chicken adds a delicious kick of heat, while the blue cheese coleslaw adds a tangy and creamy element that balances out the spice.

And not only do these tacos taste great, but they’re also a healthier alternative to traditional fried chicken tacos. By baking the chicken instead of frying it, you cut down on unnecessary calories and fat.

So next time you’re in the mood for some tacos, give these oven-baked Buffalo chicken tacos a try. They’re easy to make, packed with flavor, and are sure to become a new favorite in your taco rotation.
